These taste great & combine the goodness of berries, yoghurt & bran. They make a wonderful dessert, morning or afternoon snack, & treat for the kids after school.

This recipe is low in saturated fat and low sodium.

Ingredients

  • ½ cup frozen raspberries
  • ½ cup frozen blueberries
  • ¼ cup caster sugar
  • 1 egg
  • 3 tbsp. light marg spread (or butter if desired)
  • 1 ¼ cups plain flour
  • 1 tsp. baking powder
  • ¼ cup natural bran
  • 1 tsp. vanilla essence
  • 1 cup low fat natural yoghurt
  • 2 tbsp. chocolate baking chips

Method

  1. Preheat oven 180c (350c).
  2. Set up 9 patties in a muffin pan.
  3. Place margarine and sugar in a bowl and with a mixer cream for 5 mins until paler in colour.
  4. Next incorporate the vanilla and egg while mixing.
  5. Sift flour and baking powder then turn mixer down low and add flour 1/3 at a time.
  6. Add yoghurt then once all mixed, turn mixer off and use a wooden spoon to mix the bran, berries (gently), and then the choc chips.
  7. Divide mixture into patties and bake for 20 mins, check to see if cooked in centre, might need an extra 5 mins.
