These muffins make a perfect morning tea, fingerfood and are a perfect treat to place in school lunchboxes.
Other berries such as raspberries or blueberries can be substituted for strawberries if desired.
Ingredients
- 1 cup sifted self-raising flour
- 1 egg
- 1 tbsp. olive or veg oil
- ¼ cup milk
- 4-5 strawberries, chopped
- 6 dates, chopped
- Pinch cinnamon
- ½ cup natural yoghurt
Method
- Preheat oven 180C. Set up your muffin patties in a muffin pan.
- Microwave milk for 30 seconds. Add this to chopped dates in a small bowl so dates are soaking and set aside.
- Sift flour and cinnamon into a mixing bowl. Add egg and oil whilst mixing. Add the date/milk mixture then yoghurt. Add chopped strawberries.
- Divide mixture into patty pans and bake for 15-20 minutes or until cooked. Check with a skewer in the centre of a muffin.
- These are very easy and quick to make which makes them perfect for when the kids come home from school and want a snack.
