It is a moist pudding that is packed with all the nutritional benefits of bananas. We like to dust with icing sugar and serve with low fat custard, but you can drizzle a little maple syrup over the top instead if you prefer.
Ingredients
- 2 large over ripe bananas, sliced
- 1 cup Self Raising Flour, sifted
- ½ cup brown sugar
- 100g (3.5oz) Extra Light Margarine Spread
- ¼ tsp. cinnamon, ground
- 2 eggs
- ¼ cup Low Fat Natural Plain Yoghurt
- ¼ tsp. Vanilla Paste or vanilla bean or 1 tsp. extract
- 10 Dried Dates, chopped
- ¼ cup hot water
Method
- Soak your dates in ¼ cup of boiling hot water.
- Melt margarine in microwave for 20 seconds. Place in a mixer bowl with brown sugar.
- With your mixer beat for 5 mins, hallway adding the vanilla & cinnamon.
- After 5 mins, add eggs, one at a time, and then slow mixer down to low speed and incorporate flour in, ½ first then when that is mixed the remaining, stop the mixer.
- Now with a spatula or wooden spoon incorporate the yoghurt and dates.
- In a microwave proof bowl or dish, line bottom of with some of the banana, pour half mixture on top, then some more banana then remaining mixture and any leftover banana decorate on top.
- Microwave for 7 mins on high. Each microwave is different so place a skewer in centre as it might need some more time.
- Serve immediately with some low fat custard.
