Kecap Manis is an Indonesian sweet soy sauce that has the consistency of mayple syrup and is becoming more and more popular for use in Asian dishes instead of traditional soy sauces which are salty rather than sweet.
Kecap Manis can be purchased from the supermarket in the Asian section.
Ingredients
- 120g dried vermicelli noodles
- 150g prawns
- 1 tbl oil
- 1 carrot, sliced finely
- ½ onion, sliced
- 50g green beans, sliced
- ½ red capsicum sliced
- ½ red chilli, finely chopped or ½ tsp. chilli paste
- 2 tbls kecap manis
- 1 tbl soy sauce
- 1 tbl mirin, (rice wine)
- 2 cloves garlic crushed
Method
- Boil water in a jug and soak rice noodles in a large bowl with the hot water for 3-4 minutes. Drain and set aside.
- In a large frypan or wok heat oil, and stir fry onion and red capsicum for 4-5 mins. Then add the carrot and beans for a few more minutes. Take off heat and set aside on a plate.
- Now add prawns and stir fry for 4 minutes or until turns pink in colour. Add garlic and chilli, stir fry for 1 more minute then add the vegies back to pan, stir until all incorporated.
- Add the noodles and sauces and keep stir frying for a couple more minutes until all look heated through and cooked. Add some water if looking too dry.
- Serve immediately.
