You can add grated carrot if you like and for a vegetarian version just omit the chorizo.
This recipe is low sugar, low car and a good source of protein.
Ingredients
- 1 onion
- 1 clove garlic, crushed
- 2 large zucchini
- ½ red capsicum
- 4 eggs
- ½ cup self-raising flour
- ¼ cup milk
- 1 cup grated cheese, reduced fat
- ¼ (40g) chorizo, sliced thinly
- Sprinkle oregano
- Sprinkle smoked paprika
- 1 tsp. Dijon mustard
- Cooking spray
Method
- In a non-stick frypan cook your sliced chorizo. Set aside. Preheat oven to 180C.
- In a food processor (or you can manually grate) grate you zucchini, capsicum, onion and place into a large mixing bowl. Add eggs, self-raising flour, milk, ½ the cheese, oregano, paprika and Dijon mustard and mix until all combined, season with salt and pepper.
- Spray an oven proof dish with cooking spray and pour mixture into dish. Even add on top the sliced chorizo then remaining cheese.
- Bake in oven for 30 minutes or until set in centre. Serve with side salad.
