Waldorf salad is a delicious classic dish. This is our version of the recipe with a healthy twist or two.

For added flavour or variety, you can add sliced pear or grapes to this recipe. It is also a great salad for serving with grilled chicken breast. If you don't like the tartness of Greek yoghurt, either use natural yoghurt instead, or just add ½ tsp sugar to the Greek yoghurt.

Ingredients

Salad

  • 1 stick celery, sliced
  • 1 red apple, chopped
  • 1 small baby cos lettuce, chopped
  • 1 tbsp. chopped walnuts
  • 1 tbsp. slivered almonds
  • 1 tbsp. sultanas (optional)

Dressing

  • 3 tbsp. greek yoghurt, light
  • 1/2 lemon, juiced
  • Salt and pepper to taste

Method

  1. Place chopped ingredients in a bowl
  2. In a small bowl, mix the dressing ingredients and pour into salad ingredients bowl. Mix until everything has been coated.
  3. Divide mixture into 2 bowls.
  4. Serve immediately.
