Red Plum Wholemeal Muffins

To help you get more fibre, we use wholemeal flour to increase the fibre content in these muffins which are dense; but look great cut open & served with yoghurt.

Dietitians generally recommend diets high in fibre and for those of us with weight loss goals high fibre foods are our best friends because they help us feel full longer.

Ingredients

  • 1 cup wholemeal self raising flour, sifted
  • 2 tbsp. soft brown sugar
  • 1/2 cup low fat milk
  • 1 large egg
  • 2 heaped tbsp. light margarine spread, melted 30 sec in microwave
  • 2 ripe plum, cut into bite size
  • 1/4 cup Greek Yoghurt

Method

  1. Preheat oven to 180 degrees (160 degrees fan forced). Place 8 muffin patties into a muffin tin.
  2. Mix together wholemeal flour and sugar and make a well in the centre.
  3. Mix together milk, egg and melted butter and stir well to combine.
  4. Fold milk mixture into flour until just combined.
  5. Fold through plums and place mixture 3/4 full in muffin holes.
  6. Cook for 15 minutes or until golden brown.
