French Carrot Salad
If you are watching your sugar levels you can omit the honey and increase the other dressing ingredients, however the honey really compliments the carrots.

Ingredients
- 4 carrots
- 2 tsp. dijon mustard
- 2 tbsp. honey, warmed
- Handful parsley, chopped
- 2 tbsp. apple cider vinegar
- 2 tbsp. olive oil
- 2 spring onions, sliced
- 1 stick celery, sliced finely
- Salt and pepper to taste
Method
- 1Place your carrots into a food processer with the grating attachment otherwise use a normal grater. Once done place into a large mixing bowl. Add the parsley, celery and spring onions to the carrots.Â
- 2In a small dish place mustard, honey, vinegar, olive oil and mix with a little whisk until all incorporated.
- 3Pour dressing over the carrots, season with salt and pepper and mix thoroughly.
- 4Serve immediately.
